I can’t believe we have made it all the way to the finale of iZombie season four! It seems like this season just started, but we have the very positive news that a season five is going to happen. To celebrate I made a brainy version of one of my favorite recipes, while this is technically banana bread I very easily gave it a brainy twist. Enjoy the episode and I’ll see you next season with even more brain food from my brainy kitchen.
2 cups Bisquick (You can use baking mix or the pancake mix, either works)
3/4 cup oats
2/3 cup Splenda (You can use sugar or any other sweetener, I just frequently bake with off brand Splenda)
1/4 cup milk
4 1/2-5 medium overripe bananas (I’m talking brown bananas, do not try this with an even remotely yellow banana)
Pink/red food dye
Preheat oven to 350 Faranheit
In a medium sized mixing bowl add Bisquick, oats, Splenda, and milk. Stir these ingredients together.
You will then slowly need to add in the bananas and mix them into the batter. Take each banana one at a time and break it into pieces with your hands. Fully incorporate one banana at a time. Once the batter is completely mixed, add in as much pink or red food dye as you would like.
Grease your loaf pan, either with cooking spray or whatever you have on hand. Pour in all of your batter.
Put bread in oven on lower rack and let bake 55 minutes.
Remove from oven and let cool once the timer beeps.
You can eat this as is or with whatever topping you like. My family really likes my banana bread and it is super easy so I don’t mind making it whenever our bananas hit that too ripe moment.
