This season I wanted to do a few recipes that were exceptionally easy and could make for an easy dinner on iZombie night. For this week the recipe only involves 3 ingredients and is something I’ve actually made before just to have a healthy dinner on the fly. Enjoy Cheesy Brain Salad Brainies!
Beets (Canned or jarred, you want already cut up beets. I used canned)
Spinach or any kind of lettuce
There are no measurements this week so you can just go with how many people you are serving, how hungry you are, or really whatever floats your boat.
If the feta is not already crumbled, break the cheese into smaller pieces and put in a small container that has a lid.
Then take your beets, even though they are already sliced you should cut them into smaller pieces.
Once they are cut up add them to the container with your cheese. Seal the lid and shake them together. I actually let mine sit over night in the fridge, but you don’t need to do that.
Take your spinach or whatever salad you want to use and give it a quick rinse. Then add as much as you want to a bowl or plate. Top it with the combined beets and feta.
I told you super easy and I really like this as a quick and easy lunch or dinner.
