Liv’s a hot mess this week and I thought that I would share something hot and messy with all of you hungry zombies. I got back to baking with these cherry chocolate chili blondie brains.
Ingredients:
2 cups flour
1 cup brown sugar, not packed down
1 egg
1 stick (8 tablespoons) melted butter
1 18 oz jar cherry preserves
1 12 oz bag white chocolate chips
Red food coloring
Chili powder
Preheat oven to 350 degrees Fahrenheit.
In a mixing bowl combine 1 cup flour, 1 cup brown sugar, and 1 egg.
Put stick of butter or 8 tablespoons in a microwave safe bowl and put in microwave to melt.
Once melted pour butter into bowl of previously mixed ingredients.
Set aside, pour jar of cherry preserves and bag of white chocolate chips into a bowl on your stove. Turn burner to medium.
Stirring continuously mix preserves and chocolate until they are fully combined and there are no chocolate lumps.
Turn off heat and carefully pour preserves and chocolate into the mixture you set aside.
Begin stirring together until fully incorporated. Then gradually add in the remaining cup of flour. Once fully combined, make sure there are no flour lumps, add in multiple drops of red food coloring. I used roughly 7 drops. Then set aside.
Line a brownie pan with aluminum foil and then pour in the blondie batter.
Place in preheated oven and let bake for 20 minutes.
When time goes off, pull out blondies and lightly sprinkle the top with chili powder. Return to oven and continue baking 15-25 minutes.
Admittedly this recipe is a hot mess. The batter remained super sticky even after it cooled, but the finished product still tastes good. It isn’t as spicy as I had hoped, but I know the best way to serve this hot mess of a dessert.
Make sure you have a cherry based ice cream, maybe even Cherry Garcia. Spoon or cut out a portion of the blondies, put them in a bowl, and reheat slightly in the microwave. Once they are warmed, sprinkle some extra chili powder on them, then put a serving of ice cream on top. I’ve always found the best way to deal with a hot mess is just to add ice cream.
Though I don’t have an ice cream picture for you, I can prove just how messy these blondies are. I thought you’d get a chuckle out of my less than stellar kitchen skills this week.
