This brainy recipe was not only suggested by a huge fan of these brain food articles, Lisa Steinberg from StarryMag, but it was the first recipe where I worked with a co-chef. My girlfriend Krista, who I have mentioned a number of times and who has appeared on The Nerdy Girl Express before, helped me to make these brain pancakes. I will admit I struggled a bit with this episode, but these pancakes can be delicious.
20 oz hashbrown style shredded potatoes
2 large eggs
1/4 cup parmesan cheese
2 tablespoons flour
Red food dye
In a large bowl combine the potatoes, eggs, flour, and cheese. Then once this is fully mixed up add as much cayenne pepper and red food dye as you would like. I added a lot of cayenne. You could also add hot sauce to this mix as well. After mixing this then add salt and pepper to taste.
In a medium to large sized skillet add roughly 2 tablespoons of oil. Now this is the part I am terrible at. I suck at frying things. I’ve done it for a brain recipe one other time and almost started a grease fire. I had to throw out two pancakes at the beginning because they were soaked through with oil. I got a bit more into the groove and managed to make two pancakes that I thought were pretty good. Krista ate one of the pancakes and due to time I didn’t make any more that night. If I were better at frying these definitely would have turned out a bit better. I think in the future I would use this recipe to make a hashbrown casserole instead.
Once they were plated I did serve them with applesauce and sour cream. You could add hot sauce to the sour cream if you want to add extra kick.
