I may not be a gourmet brain chef, but I can throw together a pretty tasty brainy meal when I want to. While grocery shopping I suddenly came up with a three ingredient recipe while in the pasta aisle. I present to you Roasted Red Pepper Brains.
Ingredients
16 oz jar roasted red peppers
14.5 oz jar alfredo sauce
17.6 oz bag gnocchi (really any amount will work)
Open red peppers and pour out half of the oil
Then put in blender and puree
Bring a pot of water to boil
Add all gnocchi and wait for them to rise to the top
Immediately remove from the water once they float with some form of spoon and put them in a separate bowl
Once all gnocchi is out remove pot from boiler and turn off
In a large sauce pan combine alfredo and pureed peppers
Turn burner on low/medium and stir frequently
Once sauce is heated add gnocchi and stir together with burner on
After a couple of minutes turn of burner
Serve heated and with any additional garnish you would like

I was pleasantly surprised by how tasty this easy recipe was. The sauce was really tasty and I didn’t have to add any extra seasoning, which was a huge plus.
